These Baked Lemon-Raspberry Donuts Taste as Good as They Look

I know, I know. I’m asking you to turn on your oven in the middle of August — but trust me, it’s for a good reason. These lemon donuts are baked, covered in a sweet raspberry glaze, and topped with crushed pistachios. The hardest part about making them is convincing yourself not to eat them all in one sitting.

I love how the lemon juice is incorporated into the batter of these donuts, along with the standard flour, butter, milk, sugar and eggs. I also love the idea of baking donuts for a slightly healthier twist on an otherwise decadent treat.

But don’t worry about these being too healthy — the baked and cooled donuts are doused in a sweet, sticky raspberry glaze before being garnished with chopped pistachios.

Beautiful and delicious! And with less than 30 minutes of oven time, they are so worth it.
