Once you've got your cold brew, you can start assembling the pops. Drop some chocolate chips into the bottom of your Popsicle mold, mix your cold brew with a little sweetened condensed milk, pour the coffee over the chocolate chips, and freeze.
These frozen treats also make a great dessert for a summer dinner party. Just make the coffee decaf if you're worried about keeping people up and, as the author wisely suggests, add a little Kahlua to your coffee mixture.
