The Slow Cooker Is the Key to These Honey-Ginger Pork Tacos

The beauty of using your slow cooker in the summertime is that it won’t heat up your kitchen. Simply throw some soy sauce, honey, and fresh ginger and garlic into the slow cooker with the pork, and in about four hours you’ll have tender, succulent meat.
Then all you have to do is whip up some fresh pineapple salsa (with shredded coconut, red onion, lime, and cilantro) and warm your tortillas. Before you know it you’ll be sitting down for the perfect Taco Tuesday dinner — all without having to break a sweat.
