The Pasta Queen’s Recipe for Eggless Pasta Is Oh-So-Easy (and Delicious) to Make
It’s no secret that Nadia Caterina Munno, aka The Pasta Queen, loves to help bring more Italian culture (and food) into her follower’s lives. The Rome-born influencer is known for sharing must-try recipes — and her delectable, simple eggless pasta recipe that appeared on her TikTok recently is certainly one of them.
“This is the OG of all fresh pasta,” she announces at the start of the video. Made with a few simple ingredients, this pasta’s secret is to use “semolina flour and warm water with a pinch of salt.” That’s it! Just three ingredients.
To start, knead the semolina flour, water, and salt together until smooth. Roll it into a ball, then let it rest for 20 minutes. In the TikTok video, Munno covers the kneaded pasta dough with a bowl while it sits.
Next, roll out and cut the dough into tiny pillows, then give them texture to complete the recipe. The first suggestion from Munno is to use a gnocchi board to give them a spiral look, but that’s not your only option. “My favorite is to use the back of a cheese grater. It’s so spunky yet smooth — just like you are,” she advised in her video. “Just gorgeous!”
My favorite way to enjoy this pasta is with a creamy, plant-based pasta sauce. I especially love vegan Alfredo sauce. For a hearty pasta sauce recipe to accompany eggless pasta, sometimes I add vegan, meatless crumbles such as Beyond Beef Crumbles from Beyond Meat to a marinara sauce. Then, voila! You have a vegan Bolognese sauce.
I love trying new things and will eat anything that’s vegan, but I’m no professional chef. However, even I can make this recipe, and that means anyone can.
