This chicken chili does not contain any beans, as beans are not allowed on Whole30. But in addition to being Whole30- and Paleo-approved, this recipe is also gluten-free, dairy-free, and requires very little hands-on effort. The chicken, vegetables, and spices all go into the slow cooker with broth, and seven hours later the chicken can be shredded with a fork. Coconut milk gives it a creamy texture. The spice level can also be adjusted to taste; some people leave out the jalapeños, while others double them.
