This is a classic Instant Pot recipe because it only takes about 20 minutes in total. To make the base of the soup, you’ll need chicken stock, potatoes, and shallots. Put these three things in the Instant Pot for 10 minutes on the pressure-cooker function and it’s done. After you release pressure and mash the potatoes, you add in some butter, sour cream, cream cheese, cheddar, milk, and seasoning. Then you add whatever toppings you want, like scallions, bacon bits, and even more cheddar cheese.
