The trendiest cooking gadget of the last three years is undoubtedly the Instant Pot. It's easy to see why. This inexpensive appliance can slow-cook, pressure-cook, make yogurt, and help you brown meat, among a few other things. Kitchn has written a ton about this tool, too, including a popular review about how it worked after eight months of trying it out, a story about someone who didn't love the appliance, and of course we've developed a ton of recipes that you can use for your Instant Pot.
Looking for a new recipe to try out? I have just the thing. I recently asked Pinterest what the most popular Instant Pot recipe was on their platform and the answer sounds deliciously easy.
The most popular Instant Pot recipe on Pinterest is this 10-minute baked potato soup from Living Locurto. It was been pinned over 130,000 times in 2017, and I imagine it will only become more popular this year.

This is a classic Instant Pot recipe because it only takes about 20 minutes in total. To make the base of the soup, you'll need chicken stock, potatoes, and shallots. Put these three things in the Instant Pot for 10 minutes on the pressure-cooker function and it's done. After you release pressure and mash the potatoes, you add in some butter, sour cream, cream cheese, cheddar, milk, and seasoning. Then you add whatever toppings you want, like scallions, bacon bits, and even more cheddar cheese.
