The Best No-Bake Cookies and Bars You Can Make for the Holidays

The holidays have the oven working in overtime to achieve all the foods that are fit for celebrating — the roasts, the pies, and of course, the cookies. But while the roast definitely needs to be cooked in the oven, the cookies don't have to. There are a number of great no-bake cookies and bars that are not only quick and easy to churn out, but also leave space in your oven for the rest of the festive foods. Here are seven we love.

1. No-Bake Salted Chocolate Oatmeal Bars

Layers of brown butter- and marshmallow-coated oats and salted chocolate already put these bars over the top, but they become even more special if you add your choice of mix-ins to the chocolate, like crushed pretzels, chopped nuts, or dried fruit.

2. Banana Pudding Bars

Banana pudding is usually made with fresh bananas, which can cause the pudding to brown if made ahead. This take, however, gets its flavor from banana chips, so there's no discoloration and the bars will keep well for up to three days.

3. Coconut Snowballs

These sweet treats are made from a mix of shredded coconut, coconut oil, maple syrup, and coconut milk, which makes them appropriate for those following a gluten-free, vegan, or nut-free diet.

4. Frozen 3-Ingredient Peanut Butter Pumpkin Bites

These fudgy squares are nothing but a simple mix of peanut butter, pumpkin purée, and chocolate-covered pretzels. Keep them stored in the freezer all holiday season long for any dessert emergencies that may arise.

5. No-Bake Nutella Peanut Butter Cookies

While a splash of hazelnut liqueur, like Frangelico, is optional in these cookies, if you're OK with a little alcohol in your treats, it definitely makes them even more fit for the holidays.

Dates add sweetness to these chewy cookies and eliminate the need for any additional sweeteners. The cookies also happen to be gluten-free, vegan, and nut-free.

7. Chocolate Wafer Icebox Stacks

These are more like mini cakes than cookies, and we're more than OK with that. Layers of vanilla cream in between chocolate wafer cookies give them an Oreo-like flair.
