The 3-Ingredient Snack I’m Currently Obsessed With

Working from home means that I do a lot more snacking throughout the day than I’d like to admit. Instead of preparing a proper lunch, I’m more likely to eat a little of this and a little of that all day long until dinnertime. Some of my go-to snacks include yogurt and granola, carrots and hummus, cheese and crackers, and fresh fruit.

But I have a new favorite that’s been in heavy rotation. It only requires three ingredients, and sometimes it doubles as dessert.

Dates + Peanut Butter + Flaky Salt = Snack Perfection

We’ve been doing a lot of date coverage lately, which inspired me to pick up a bag of pitted California dates at my local Whole Foods. After eating a few plain, I wanted to give them a little more oomph, so I pulled out the peanut butter — and the rest is history.

The “recipe” for this snack goes a little something like this: Set a few pitted dates on a plate, swipe on some peanut butter, and top with a pinch of flaky sea salt. The soft, sweet dates are the perfect vehicle for smooth, creamy peanut butter, but it’s the big flakes of sea salt that really push this into next-level territory. This is the fast and fancy snack (or after-dinner treat!) that simultaneously satisfies my sweet tooth and gives me a little boost of protein and energy.

Since there are only three ingredients here, I try to use the best of the best. The peanut butter I use has only one ingredient: dry roasted peanuts. There’s no added salt, sugar, or oil — just pure, unadulterated peanut goodness. If you prefer almond butter, cashew butter, or sunflower seed butter, by all means, use those! For the sea salt you want a finishing salt, like Maldon or Jacobsen, to give you those beautiful flakes that are so key here.

The hardest part about this simple snack is only eating a few, as I could easily eat a whole bag of dates prepared this way in one sitting!
