The beauty of casseroles is that there’s one for every single occasion. There are eggy breakfast casseroles, veggie-packed casseroles, extra-creamy and ultra-comforting casseroles, and low-carb casseroles. But I have a special fondness for casserole side dishes.

A casserole side dish is my crutch for rounding out weeknight dinner, and as I plan Thanksgiving dinner it’s one of my first considerations on the roster of sides (after the stuffing recipes and mashed potatoes, of course).
