My Honest Review of Taste of Home’s Sour Cream Cucumbers

If there’s one thing I learned from this recipe, it’s that cucumber salad needs salt. This is the only recipe I tested that didn’t call for any salt at all — the cucumbers aren’t salted and strained, and there’s no salt in the dressing. Not only did this make the dressing decidedly sweet, but it also meant the flavor of the salad was flat and bland.

On a positive note, the amount of dressing was minimal, which I actually didn’t mind. And since the cucumbers weren’t salted and strained or swimming in dressing, they remained quite crisp and crunchy.

If You’re Making Taste of Home’s Sour Cream Cucumbers

  1. Peel the cucumbers. The recipe notes that peeling the cucumbers is optional, but I think peeled cucumbers (even just partially peeled) make a better salad.
  2. Stir 1/2 to 1 teaspoon kosher salt into the dressing. This recipe would taste a lot better with a little salt. Start by whisking 1/2 teaspoon kosher into the dressing, taste it, and then whisk in an additional 1/2 teaspoon if desired.
