Sometimes it’s fun to play around in the kitchen, chopping herbs with tiny scissors and pretending to be Ina Garten. But sometimes — a lot of the times – all you really want is for the food to make itself so you don’t have to. This simple Swiss chicken bake is the next best thing, because it’s a rich, creamy dish that will likely appeal to the pickiest of eaters. It contains just five ingredients, does not require a single knife, and is so easy you could practically assemble the whole thing with your eyes closed.
To start, take a baking dish and arrange chicken breasts in the bottom of it in a single layer. Cover each chicken breast with a slice of Swiss cheese. Whisk together chicken soup and Chardonnay. (There will be plenty of wine left in the bottle — do with that what you will.)
Pour the soup and wine mixture right over the top of the chicken, then cover that with the dry contents of a box of herb stuffing mix to give it some flavor and texture. Cover the dish and bake it for about 40 minutes, then bake it for another 20 minutes with the cover off to let everything get nice and golden-brown and crisp on the top.
It takes a while to cook, but there’s no chopping and virtually no prep time required at all, so you can just assemble the casserole and leave the room for an hour. When you come back the dinner will be cooked and ready to go with all its creamy, indulgent sauce and crispy topping.
