Sweet and Spicy Steak Bites

Steak bites are a staple in my weeknight dinner routine, and my secret to stretching a pair of steaks into a meal for the whole family. And while they’re perfectly tasty when seasoned simply with salt and pepper, adding sweetness, spice, and a squeeze of citrus takes them to a whole new level.
Here, bite-sized cubes of seasoned New York strip steak are charred in a skillet until the edges are browned and the inside is perfectly juicy, then fresh jalapeño slices and a sticky drizzle of honey are tossed in just before serving. The honey mixes with the steak’s juices, glazing each piece, and the slices of jalapeño sear and soak up the honey. Finish with a squeeze of lime juice to brighten the whole dish.
Adjust the Spice Level to Your Liking
The spice level of fresh jalapeños varies pepper to pepper. Make this dish more mild by slicing the jalapeños lengthwise and scooping out the seeds and white membrane. Then, slice the jalapeño into half moons instead of round slices. When you prepare the pepper like this, you’ll still taste the flavor of the jalapeño without its heat.

(1 to 1 1/2-inch thick) New York strip steaks
- 1/2 teaspoon

Instructions
Thinly slice 1 small jalapeño into rounds. Cut 1 lime into wedges, if desired. Cut 2 pounds thick-cut New York strip steaks into 1-inch cubes and season with 1/2 teaspoon kosher salt.
Heat 2 tablespoons olive oil in a large skillet over medium-high heat until shimmering. Add the steak cubes and sear until browned, flipping them halfway through, 6 to 8 minutes total. Add 2 tablespoons honey and the jalapeño and cook for 1 minute more. Remove from the heat and serve with the lime wedges.
