I Could Eat a Whole Plate of These Sweet & Spicy Cauliflower Bites
By now you’re probably very familiar with the fact that cauliflower is a magical ingredient. It no longer languishes on a sad crudité platter, waiting for some poor soul to dredge it through too much Ranch dressing to mask its rather bland flavor. It was a couple years ago that I first saw people turning cauliflower into rice or pizza crust, and then it became used as a base for mac and cheese and mashed “potatoes.” In other words, cauliflower can be transformed into anything if you believe hard enough. It’s kinda like tofu in that way.
When I saw this recipe for honey Sriracha cauliflower wings, I knew immediately they were going to be delicious. I’ve had faux cauliflower wings before, but these are a little special because the recipe requires that you coat the cauliflower in a panko mixture (along with flour, milk, and water) before they get fried. I think this will result in a better texture overall, and they’ll be easier to eat by hand. Sometimes cauliflower bites can get a little bit soggy, but these look super sturdy due to the coating.
After the panko-coated cauliflower is fried, you toss them in a honey, Sriracha, and ketchup mixture until completely covered. You can serve them with sesame seeds if you so desire.
Any time you’d make chicken wings is a good opportunity to make these instead. Any summer party, for example, would benefit from these cauliflower bites. Or if you’re someone who regularly watches sports with friends, these would be a unique addition.
