This Sheet Pan Sweet Potato Hash Is Here to Save Breakfast
You already know the merits of a sheet pan meal when it comes to getting an easy dinner on the table on busy weeknights — totally hands-off cooking after minimal prep work, quick cleanup — but the same attributes apply to breakfast or brunch as well! Why stand over the stove making eggs and bacon to order when you can just knock it all out at once with the help of a sheet pan?
This recipe is a great one to bookmark for future brunches at home, or a breakfast-for-dinner night in your meal plan. It’s super adaptable to whatever you have in your fridge (the author suggests throwing in some Brussels sprouts) and can fit all sorts of dietary needs (don’t eat pork? Leave off the bacon!).
You simply toss some cubed sweet potatoes, Yukon Gold potatoes, diced red onion, and minced garlic on a sheet pan with olive oil, salt, and pepper. Then you sprinkle on some chopped raw bacon before putting the whole pan in a hot oven to cook.
In about 30 minutes or less you’ll have perfectly crispy bacon and caramelized veggies. Then all that’s left to do is crack some eggs on top, return the sheet pan to the oven, and cook until the eggs are set to your liking. Bring the sheet pan right over to the table and let everyone serve themselves. Don’t forget the scallions and hot sauce for garnish!
