Pumpkin desserts get all the love this time of year, but let’s not forget about sweet potato treats! This healthier twist on blondies features sweet potato purée for extra moisture, flavor, and veggie power.

This recipe calls for making your own sweet potato purée — peeling, cubing, steaming, and puréeing two large sweet potatoes — but if you’re short on time, you can use canned sweet potato purée instead (just make sure it has no added sweeteners or ingredients). You’ll need one-and-a-half cups purée total.

With whole-wheat flour, maple sugar, and toasted walnuts, these blondies are a bit more wholesome than your average blondie, but there’s still plenty of butter and chocolate chips to keep them from tasting too virtuous.

If you’ve got picky kids or you’re trying to up your veggie intake, this is the perfect recipe to make. It’s a great way to satisfy your sweet tooth and celebrate fall without overdoing it.
