Summer Brunch: Baked Eggs with Zucchini Blossoms

Got zucchini? How about zucchini blossoms? If you do, how about these brunch baked eggs? They have soft, yolky eggs layered with chopped zucchini flowers, garlic chives, and fresh mozzarella.

We love baked eggs; they are one of the simplest brunch dishes to make, and they look so elegant, in their little cups. This particular recipe is fresh, and a little different. We always want to use zucchini blossoms but needed some fresh ideas. This is a great one, and will go on the breakfast menu very soon!
