Combine arugula with a few generous handfuls of sweet summer strawberries and you’re sure to please just about anyone. Add a drizzle of balsamic, some fresh basil, and a handful of roasted pistachios to the equation, and you’ve got your family’s new favorite side salad.

A Better Strawberry Arugula Salad, Thanks to One Ingredient

Combining strawberries with arugula isn’t new, but there’s one way to give it a spin: basil. The herb is a natural companion to the fruit, and upgrades the salad by bringing even more freshness to the bowl. If you don’t have basil on hand, mint would also work well. While this salad is meant as a side, topping it with baked or grilled salmon turns it into a main.

Ingredients

  • 3 tablespoons

    olive oil

  • 2 tablespoons

    balsamic vinegar

  • Kosher salt

  • Freshly ground black pepper

  • 5 ounces

    arugula (about 5 packed cups)

  • 2 cups

    sliced strawberries

  • 1/2 cup

    roasted pistachios

  • 2 tablespoons

    chopped fresh basil leaves

Instructions

  1. Whisk the olive oil, balsamic vinegar, a pinch of salt, and a few grinds of black pepper together in a large bowl. Add arugula and strawberries and toss to combine. Add the pistachios and basil and toss again lightly.
