This creamy salmon skillet is the best way to get you out of your weeknight dinner rut. Even better? It all comes together in less than 30 minutes.
Coarsely chop parsley and slice garlic.
Drain and pat dry sun dried tomatoes before slicing.
Finely grate Parmesan cheese.
Pat salmon dry with paper towels and season with salt and pepper.
Heat olive oil in a frying pan. Sear salmon skin side up until golden brown, about 4 minutes.
Flip and cook for another 2-5 minutes. Transfer salmon skin side up to plate and wipe down the pan.
Add more olive oil to pan. Then add sun dried tomatoes, garlic, and red pepper flakes. Saute until fragrant.
Add baby spinach and cook until wilted. Add Parmesan cheese, half and half, salt, and pepper.
Return salmon to pan skin side down and simmer for 2 minutes. Garnish with parsley.
