Salt-baking a fish is easy enough for anytime cooking, but fancy enough to be a dinner-party showstopper — and it’s delicious. Here is my favorite way to do it.
Add kosher salt and water (or egg whites) to the bowl of aromatics (ginger, lemongrass, and lime zest) and mix until well combined.
Place salt mixture on a baking sheet, shaping the salt in about the same size as the fish. Add fish on top. Cover the fish entirely with salt and seal.
Bake the fish in a 400ºF oven for about 30 to 35 minutes. Use a large spoon to break off the salt crust.
The fish is best served family style with lime as garnish.
