Pommes Anna is a French side dish made of just potatoes, butter, and salt. While most Pommes Anna recipes are fairly complicated, there's a simpler way to make it at home with everyday ingredients and equipment. Here's how.
Peel and slice the potatoes into 1/8-inch thick rounds with a mandoline or with a sharp knife.
Brush pan with melted butter and layer the potato slices in a spiral pattern. Brush with melted butter and sprinkle with salt. Repeat three more times. Be sure to stagger the slices.
Place aluminum foil onto the potatoes, then weigh down the foil by topping it with pie weights in a pan.
Bake for 25 minutes at 425ºF. Remove the weight and foil, and bake for another 20 minutes. Finally, broil until the top is golden brown. Invert the pomme anna and serve.
