How to Make Potato Chips in the Microwave

The fact that a short spin in the microwave can transform slices of potato into crispy (truly crispy!) chips without needing a drop of oil still seems like magic. Here’s how to make them.

Slice the potatoes 1/8- to 1/4-inch thick. This is easiest with a mandoline.

Soak and rinse the potatoes in cold water to remove starch.

Dry the potatoes between two clean dish cloths, or spin them dry in a salad spinner.

Arrange one layer of potato slices on a microwave-safe plate covered with a few layers of paper towels. Make sure the potatoes don’t touch. Sprinkle with salt or herbs if desired. For a richer flavor, brush with olive oil first.

Microwave at 100% power for 3 minutes.

Flip the slices and microwave at 50% power for another 3 minutes.

Flip and continue cooking in 1-minute intervals at 50% power until the chips are crispy and starting to turn golden.
