How To Make Classic Linzer Cookies

With linzers, two cookies serve as the bookends to the sweet and sticky jam of your choice, transforming into one holiday cookie made for customization.

 Toast 1/2 cup almonds, then mince them in a food processor with 1/2 cup all-purpose flour. Add in another 1 3/4 cups flour and 1/2 teaspoon salt.

Cream 2 sticks butter and 1 cup sugar. Then, add 1 egg, 1 teaspoon vanilla, and the flour mixture to form a dough.

Divide the dough into 2 equal portions and chill about an hour.

Sandwich each half of the chilled dough between two pieces of parchment paper and roll out each to 1/4-inch thick.

Make the cookie bottoms from the first half of the dough by using a 2-inch circular cookie cutter to cut the dough into rounds.

Make the cookie tops from the second half of the dough by using the 2-inch cutter to make rounds, then using a 1-inch cutter to make a hole in the center of each round.

Chill the rounds for 30 minutes, then bake in a pre-heated 350° oven until the cookies are lightly golden-brown, 9 to 11 minutes. Cool completely before filling.

Spread each cookie bottom with 1 teaspoon of your filling of choice (try raspberry jam) and top with a cookie top. Sprinkle the cookies with powdered sugar just before serving.
