With its mixture of creamy mashed potatoes and tender cabbage, this recipe for the Irish dish of colcannon requires a declaration of love. It's that good.
Place cubed potatoes and salt in a medium pot and cover with cool water. Cook for 10-12 minutes at a simmer.
Melt butter in skillet and cook until it browns, about 7 minutes. Set aside.
Cook cabbage and scallion whites in pan with some browned butter until tender, about 8 minutes. Season with salt and pepper.
Drain potatoes and return to pot. Add milk and mash with potato masher.
Deglaze the cabbage with chicken broth. Cook until broth is reduced, about 3 minutes.
Add cabbage to mashed potatoes, top with scallion greens, and fold to combine. Top with more brown butter and serve immediately.
