If you’ve been eyeing those gorgeous tomatoes at the farmers market and wondering how to transform them into jars of delicious red sauce, wonder no more.
Core out the stems from tomatoes and slice a shallow "X" in the bottom of each.
Blanch tomatoes by dropping them first into boiling water for 45-60 seconds and then in an ice bath.
Place tomatoes in food processor and blend until smooth.
Simmer tomato sauce in pot for 30-90 minutes, until it reaches the taste and consistency you like.
Store in containers up to 3 months in the freezer, or can and store up to 1 year.
