When fresh berries are abundant this summer, do yourself a big favor: snatch them up. You can make jam with just fruit, lemon juice, and sugar in ~30 minutes.
Cut the berries into large chunks, discarding any heavily bruised sections.
Combine the fruit, sugar, lemon, and salt in a saucepan over medium heat and mash the fruit a little with a potato masher or fork into a chunky texture.
Bring the mixture up to a boil, stirring frequently until the fruit is jammy and thick (about 20 minutes).
See if jam is set by dropping jam on a frozen spoon and running a finger through the jam. If it leaves a distinct track, it's done. If not, keep cooking.
Transfer the jam into glass jars and cool to room temperature. Seal and store in the refrigerator for up to 3 weeks.
