The tomatoes coming out the garden, and those available at Farmers’ Markets around the city right now, are the season’s last. They’re full of flavor. They’re striped, knobbed, and gnarled; beautifully so.
When one comes across vegetables like this, the last thing you want to do is cook them. Enjoy their beauty as is, just let them be. Over-cooking, saucing, dressing, and even garnishing ripe, seasonal vegetables is like over-dressing a beautiful woman, there’s no need.
The best treatment is a drizzle of olive oil, and a dash of high-quality sea salt and a faint peppering. Don’t over-do it. Just give her a quick swipe of lip-gloss, and send her on her way.
