Spring is finally here! To celebrate the return of growth and flowers and green things, let’s all make this verdant green matcha mint milkshake. But don’t be fooled by the name — there’s no actual ice cream in here, so it’s totally fair game for breakfast.

In order to avoid watering down the milkshake, the author doesn’t use ice here — instead she pours a can of coconut milk into an ice cube tray and freezes it. So smart!

When you’re ready to assemble, you simply blend those frozen coconut milk cubes, some liquid coconut milk, softened dates, oats, fresh mint, matcha, coconut oil, chia and flax seeds, and vanilla extract together. To make it feel a little more special and milkshake-like, you can top with some whipped vanilla coconut cream and a sprinkle of cacao nibs. Or feel free to leave it as is!

More filling than your standard smoothie, yet a little more wholesome than a milkshake, this frozen beverage is the stick-to-your-ribs drink that will carry you from breakfast to lunch. And with the zing of caffeine from the matcha, you might even be able to skip your morning coffee.
