Start This Batter Tonight for the Best Waffles Tomorrow Morning

Tomorrow is International Waffle Day, which means it’s pretty much mandatory that you kick off your Saturday with a batch of waffles. But don’t wait to pull out your flour and milk until tomorrow morning — start the batter tonight and let it rest for truly exquisite results.

Mixing some of the ingredients tonight — water, honey, yeast, flour, butter, salt, and milk — is like a little gift to your future self. Not only does this cut down on the time it takes to whip up a batch of waffles in the morning (all you have to do is add eggs and baking soda to the batter before cooking), but it also creates a better end product. These waffles will have crispy edges, chewy centers, and a complex flavor profile. What more could you want?

If you’re anxious to just get those waffles on the iron and then dig in, a pat of butter and some maple syrup will work just as well.
