Ingredients
- 1 1/2 cups
cherry tomatoes (ideally a mix of colors), halved
- 1/2
English cucumber, cut into 1/2 inch dice
- 1
jalapeño, seeded and minced
- 2 tablespoons
olive oil
- 1 tablespoon
freshly squeezed lemon juice
- 1/4 teaspoon
salt, plus more for seasoning
Dash of freshly ground black pepper, plus more for seasoning
- 2 tablespoons
torn basil
- 8 ounces
burrata (optional)
Crackers, for serving
Instructions
In a medium mixing bowl, toss together the tomatoes, cucumber, and jalapeño.
In a small mixing bowl, whisk together the olive oil, lemon juice, salt, and pepper. Drizzle the mixture over the vegetables and toss to make sure all the veggies are coated.
Add the basil and season with more salt and pepper, if needed.
If serving this salad on its own, tear and arrange the burrata over the salad and serve with crackers.
