Of all the winter squashes that have made their way to the market, there's none I'm more excited about than spaghetti squash. Roasted, baked, or steamed, these thin, durable strands can be used just about any way you'd traditionally use noodles or spaghetti. They're also an easy way to get more vegetables on the table, and can sometimes be the trick to a lighter spin on comfort food classics.
