Nothing screams summertime magic the way making s’mores does. For me, s’mores evoke memories of camping and beach bonfires, where we’d stick marshmallows onto unwound wire hangers and thrust them into the flames. I’m known to burn mine until it looks like a little lump of coal, then quickly add the chocolate and graham crackers to hold the ooey gooey mess together.

The hardest part is waiting patiently for it to cool, so as not to blister your mouth with the molten mallow. But it’s all worth it for that first bite, when the smoke and sweet and crunch hits you all at once, and you know marshmallow is running down your face and hands but it’s okay. This is what it’s all about.

Unfortunately, not all of us are going to make it camping this year. Some people, including myself, likely won’t see a bonfire either. But that doesn’t mean you can’t have s’mores! It takes minutes to make them in your oven (even your toaster oven!), in the safety of your home, and you don’t have to miss out on any of the ooey gooey marshmallow magic. Here, we’ll show you how to do it — and how to customize them to your liking.

Which Type of S’mores Eater Are You?

In my experience with s’mores, there are two types of s’mores eaters: the ones who like their marshmallows lightly golden brown and melty, and those who prefer a little char. For those who prefer a golden marshmallow, heat your oven to 450ºF, arrange your graham crackers with marshmallows on top, and toast in the oven for five minutes, or until you’ve reached your desired marshmallow doneness. If you prefer a little char (that’s me!), heat your oven to broil and toast your crackers and marshmallow for about two minutes.

Either way, when your marshmallows are done, remove from the oven and top with your chocolate pieces (I like to add a generous pinch of flaky salt, too). Top with the other toasted graham cracker, then allow to sit so the chocolate melts and the marshmallow cools slightly.

Ingredients

  • 8

    whole graham cracker sheets

  • 8

    large marshmallows

  • 2 ounces

    chocolate bar

  • Flaky salt (optional)

Instructions

  1. Line a baking sheet with parchment paper if desired. Break 8 graham crackers in half crosswise so you have 16 pieces. Place on the baking sheet and top 8 of the pieces with 1 large marshmallow each.

  2. Option 1: For deep golden-brown marshmallows: Arrange a rack in the middle of the oven and heat the oven to 450ºF. Bake the marshmallows and graham crackers until the marshmallows are deep golden-brown on top, about 5 minutes.

  3. Option 2: For charred marshmallows: Arrange a rack in the upper third of the oven and heat the oven to broil. Broil the marshmallows and graham crackers until the marshmallows are slightly charred on top, about 2 minutes.

  4. Remove the baking sheet from the oven. Divide 2 ounces chocolate bar over the marshmallows and sprinkle with flaky salt if desired. Close the s’mores by topping with the remaining graham crackers. Let sit 5 minutes for the chocolate to melt and for the marshmallows to cool slightly before serving.
