A cheesy baked pasta dish studded with bacon is a dream meal for sure, but rich comfort food like that doesn’t make its way onto every week’s meal plan. Between the heavy prep before and the “too full” feeling a rich meal leaves after, it’s definitely a special-occasion dish. Fortunately, with a little help from the store and a quick roasting of some fresh veggies, you can make the easy everyday comfort food you crave.

Daiya’s Cheezy Macs are a dream on their own. Vegan and gluten-free, they’re a snap to put together — exactly what you want after that first cold fall commute home. They stand up on their own as a meal or a side, but they also make the perfect canvas for add-ins. You know that fall produce you were so excited to buy while meandering through the farmer’s market, scarf on neck and PSL in hand? Don’t let them wilt in the fridge. Pile them all on and make a good thing even better!

That’s exactly what we did to make this Smoky Fall Squash Mac & Cheese. We used Daiya’s new Bac’n & Cheddar Style Deluxe Cheezy Mac as our base for our fall favorites. It’s got that hearty, robust flavor that’s so satisfying on chilly nights, but since it’s totally plant-based, it’s still a light meal.

Here’s How We Made It

To make the Smoky Fall Squash Mac & Cheese, we made a box of Bac’n & Cheddar Style Deluxe Cheezy Mac exactly as it says on the package. Then, we roasted some butternut squash cubes and sautéed some kale to bump up flavors and boost the veggie count. Mix it into the mac with a sprinkling of toasty gluten-free breadcrumbs and boom, dairy-free dinner dreams in just a few minutes.
