The Smitten Kitchen YouTube channel, until last week, was something of a content desert. Deb Perelman, the beloved blogger and cookbook author behind some of the most reliable and appealing recipes of the last decade, had last uploaded a video three years ago and there were only three videos total. But last week, she announced that is all about to change: not only did she post a new video, but she will be uploading new videos each week for viewers at least through late July

The same charm that always came through in her blog posts and cookbook headnotes remains intact in the first video for “Perfect Blueberry Muffins.” The approachable, simple recipes that she has been posting for 15 years translate well into the videos, with little added tips like why she melts the butter instead of creaming it, and explanations like why she won’t ask you to measure lemon zest (thank God!). The original recipe from the first video is a classic Smitten Kitchen one, from 2010, but she offers substitutions and improvements she has learned since. The seven-and-a-half-minute video shows how to make muffins that are “almost equal parts berry and muffin,” with “the crunchiest bronzed lid on top.” And, the magic all happens in a single bowl. Perhaps the best part of the video, though, comes in the comments where her son supportively says, “I just want to say, as Deb’s son, these muffins were so good in the process of creating the recipe. Enjoy and subscribe to my mom 😁”

Over the years, Smitten Kitchen has shown us how to make better egg salad, baked ziti, tomato soup, and hundreds more comfort food classics that she finds small, simple ways to improve upon. Her meatloaf is a classic, and her cookbooks, The Smitten Kitchen Cookbook and Smitten Kitchen Every Day, are great kitchen guides.
