My New Favorite Sandwich Recipe for Office Lunches

Lunch is the hardest meal to make. Whether you’re trying to get creative with your kid’s lunch box, or are just trying to eat something a little more exciting at the office, there are so many things to consider. Does it travel well? Will it stink up the office kitchen? Will it be filling enough? Is it exiting enough that I want to eat it, but not too complicated to make in bulk on a Sunday?

This year I finally set about tackling my food budget and I decided it was essential that I bring lunch to work every day. No more pricey salads. I’ve played around with a variety of different recipes over the last several months, and have finally found what I think is the mecca of office lunches, and I’m so excited to share it with you today.

If you like chicken or tuna salad sandwiches, then you need to give this lighter chickpea salad sandwich a shot. It’s so incredibly satisfying and delicious that it’s hard for me to wait until noon to eat it all. I estimate it costs about $2 per sandwich.

The base of the sandwich is chickpeas that have been lightly smashed and mixed with lots of pickles, some mayo, onion, Dijon mustard, dill, turmeric, and some more seasoning. It’s super tangy and creamy. I made a big batch of this on Sunday so my boyfriend and I could assemble sandwiches for the week.

To create the sandwich, I layer on some of the spread, add even more pickles (because I’m a fiend), some greens, tomatoes, and some grated carrots (which I also prep on Sunday) and that’s it!
