Lately I'm all about making simple, weeknight meals with luxurious twists. It doesn't have to be complicated, but I want it to be special. Is that so hard? I like this recipe because it takes something easy to throw together – pesto, pasta, and shrimp – and makes it a little bit more exciting. Instead of the traditional basil pesto, you get an spring-y asparagus-spinach pesto.
This recipe has three main components. The asparagus-spinach pesto comes together in your food processor, the pasta is boiled, and the blackened shrimp is done in a large sauté pan on the stovetop. Add everything together in the sauté pan and you've got yourself dinner.
