Marinating shrimp before sautéing it on the stovetop gives the shrimp a chance to soak in a ton of flavor — and, in this case, that flavor is inspired by carne asada. Carne asada generally refers to thinly sliced beef that’s been marinated and char-grilled, but we love its spicy flavor so much that we decided to apply the aromatic marinade to plump and juicy shrimp, too.

That being said, this easy marinade can be used for everything from shrimp to pork to, of course, sliced steak.

A Carne or Camarones Asada Marinade

To make this Spanish-inspired carne asada (or camarones asada) marinade, you need just a few basic ingredients: water, olive oil, orange juice, white vinegar, salt, jalapeños, garlic, and cilantro.

It’s easy to mix and match the proteins here: You can use the same amount (2 pounds) skirt or flank steak, shrimp, chicken breast, or chicken thighs. As for the cooking method, we particularly like this marinade when the protein is cooked on the grill or sautéed over high heat.

Ingredients

  • 1/2 cup

    water

  • 1/4 cup

    olive oil

  • 1/4 cup

    orange juice

  • 1 tablespoon

    distilled white vinegar

  • 1 teaspoon

    kosher salt

  • 2 pounds

    peeled shrimp or steak

  • 1/2 cup

    fresh cilantro leaves

  • 1

    large jalapeño, sliced

  • 2 cloves

    garlic, minced

Instructions

  1. Place the water, olive oil, orange juice, vinegar, and salt in a glass measuring cup and whisk to combine.

  2. Place the shrimp or steak, cilantro, jalapeño and garlic in a large zip-top bag and pour the marinade in. Seal the bag and refrigerate at least 1 hour or overnight before cooking.
