Q: What is the value of grilling salmon on a cedar plank rather than directly on the grill?

Editor: Just like adding applewood or hickory to the grill for a particular smoky flavor, grilling salmon on a cedar plank imparts a smoky, woodsy flavor. Having a barrier between the fish and the heat also slows the cooking process, which makes it easier to prevent overcooking. Just be sure to soak the cedar planks before grilling — dry boards run the risk of quickly catching on fire.
