This Sweet & Spicy Sheet Pan Chicken Is Better than Takeout

It’s Friday, and you’re tired after a long week of work. You know you’re in for a night on the couch with some TV, a glass of wine, and a comforting dinner. You’re not up for an elaborate cooking session, but you also don’t want to spend money on takeout. The solution: this easy sweet & spicy sheet pan chicken.

In order to get really great texture on the chicken, the author shares a few smart tips. First she suggests putting cut pieces of chicken in a zip-top bag with some cornstarch. This is an easy way to get a nice, even coating on the chicken to help it crisp up later. After you add the chicken to the sheet pan, along with bell pepper, pineapple, and onion, she recommends spraying everything with cooking spray. These two tricks yield a crunchier, faux-fried result without the frying.

While the chicken is roasting away in the oven, you can quickly whip up the sauce — a mixture of soy sauce, water, sugar, red pepper flakes, minced garlic, and ground ginger thickened with a bit more cornstarch — and cook or microwave some rice.

When the chicken’s ready, just toss it with the sauce, serve it over the rice, and garnish with a bit of chopped green onion. Now all you have to decide is which show to binge-watch on Netflix tonight!
