Making dinner every night is not a job for the faint of heart; there is so much to juggle, from planning and shopping to cooking and cleanup. I am a recipe developer, so trying new recipes and testing out riffs on old favorites is what I love. Even so, I need a night every week devoted to ease, and that’s where the inspiration for this simple sheet pan recipe came from. 

This easy dinner starts with ingredients that are already flavor-packed, like smoked sausage. Next come the veggies. To make it as gorgeous to look at as it is delicious to eat, use different-colored bell peppers, and buy broccoli crowns that can be broken apart with your hands (or use prepped florets instead). Finally, fresh herbs (any combination that you have in your fridge) are what brings this simple sheet pan dinner together. Go ahead and give this five-ingredient sheet pan dinner a try — it might be the easiest (and most delicious) thing you make all week.

For this sheet pan dinner, you need just smoked sausage, broccoli, bell peppers, garlic, and herbs. (Salt, pepper, and oil are freebies, and the Parmesan cheese is a nice extra but not necessary.)
  • It’s incredibly easy. This sausage and veggie dinner is easy in every way: a short ingredient list, minimal hands-on prep time, and just one pan for cooking and cleaning.

  • Smoked sausage: Links of smoked sausage, like kielbasa, are already spiced and smoky. All you need to do is slice them.
  • Broccoli: Trim bite-size florets from about 2 broccoli crowns, or buy already-cut florets to reduce the preparation time even more.
  • Bell peppers: Get a variety of color by using red, orange, and/or yellow bell peppers. Toss them onto the sheet pan halfway through roasting for the best texture.
  • Garlic: You’ll need 3 cloves of fresh garlic.
  • Herbs: This is the perfect way to use up any herb sprigs lingering in the fridge.

Ingredients

  • 1 pound

    fresh broccoli florets (from about 2 crowns, about 4 cups)

  • 3 cloves

    garlic, minced

  • 12 to 16 ounces

    smoked sausage, such as kielbasa, cut crosswise into 1/2-inch-thick rounds

  • 3 teaspoons

    chopped fresh herbs, such as thyme, oregano, rosemary, and sage, divided

  • 3 tablespoons

    olive oil

  • 1 teaspoon

    kosher salt

  • 1/2 teaspoon

    freshly ground black pepper

  • 3

    medium bell peppers, cut into 1-inch pieces (about 3 cups)

  • Grated Parmesan cheese (optional)

Instructions

  1. Heat the oven to 425°F.

  2. Place 1 pound broccoli florets, 3 minced garlic cloves, 12- to 16-ounces sliced smoked sausage, and 2 teaspoons of the chopped fresh herbs on a rimmed baking sheet. Drizzle with 3 tablespoons olive oil, then season with 1 teaspoon kosher salt and 1/2 teaspoon black pepper. Toss to coat, then spread the mixture into an even layer.

  3. Roast until the broccoli is beginning to brown, about 20 minutes. Add 3 chopped bell peppers, toss to combine, and spread back into an even layer. Return to the oven and roast until the sausage is browned and the vegetables are tender, 15 to 20 minutes more. Garnish with the remaining 1 teaspoon chopped herbs and Parmesan cheese if using.
