Anyone Could Make This One-Pan Italian Chicken and Veggies

I’m always looking for good, healthy weeknight recipes that are fast to make, full of vegetables, and still tasty and delicious. They can be harder to find than one would think, but this Italian-inspired chicken and vegetable dinner fits the bill. It cooks on a single sheet pan, so it’s extremely easy to clean up and you can prepare it the night before. It’s just the sort of thing that makes you feel like you’re starting off the week on the right foot.

It starts with several boneless, skinless chicken breasts, pounded to half an inch thick, because pounding the chicken to an even thickness makes it cook more evenly and consistently, so you don’t wind up with chicken breasts that are dry and sad on one end and fat and raw on the other.

For this recipe, you’ll make up a big batch of a Mediterranean-inspired marinade that includes balsamic vinegar, olive oil, garlic, and Italian seasonings. That marinade will go on everything. My personal favorite part of this recipe is that the chicken gets to marinate in a zip-top bag. I just love squishing the bags to make sure the chicken is fully coated. It was my favorite part of cooking when I was a kid, and it still feels like a game every time I get to do it. Just put the chicken in the bag, top with half the marinade, and seal the bag, squeezing out as much air as possible. Then smoosh the bag around in your hands until everything is coated, and put it in the refrigerator for at least 30 minutes.

While the chicken marinates, you’ll start chopping your vegetables. The author calls for zucchini, green beans, and tomatoes, but you could use whatever vegetables you like, or whatever vegetables are in season. The vegetables get tossed in the other half of the marinade, and when you’re ready to cook, all the chicken and vegetables go into the oven at the same time on a rimmed baking sheet.

This is such a great recipe to have in your back pocket. It’s as healthful as it is easy, and it’s a great way to highlight chicken breasts and vegetables.
