This Sheet Pan Garlic-Ginger Chicken Is a Meal Prep Miracle

The sheet pan is the humble hero of easy dinners and lunches. When you’re short on time and don’t want to make a huge mess in your kitchen, you can always count on the sheet pan to save the day. And this sheet pan ginger-garlic chicken and broccoli from Pinch of Yum is an easy workday lunch you can make over and over again without getting bored — the secret is in the sauce.

Outside of the sauce ingredients, this recipe only requires three main ingredients plus optional toppings. You need to have chicken breasts or thighs, broccoli, and red pepper. You can top these items with sesame oil, sesame seeds, and green onion.

The sauce is where things get interesting. As the recipe name suggests, the main ingredients are garlic and ginger, but things get funky with soy sauce and white vinegar. The sauce is thickened and sweetened with dates, which I don’t think I’ve ever seen before in a sauce — so smart! You blend all the ingredients together and basically pour half of the sauce over the chicken and broccoli before baking, and then the rest of it after it’s done cooking.

Pinch of Yum really highlights how excellent this recipe is for meal prep lunches. There’s minimal prep, and it takes about 15 minutes in the oven to cook everything. In the recipe, she serves it with orange slices and almonds for a well-rounded lunch or dinner.
