This Veggie Sheet Pan Meal Only Needs 15 Minutes of Prep

2018 is the year that I became a meal prepper. I plan out (most) of my meals for the week on Saturday, and usually go grocery shopping and cook on Sunday. This week I have my eye on this easy vegetable sheet-pan meal from Gather & Dine. I’m always looking for more vegetable-heavy lunches for the week, and this looks easy and delicious.

This recipe was inspired by one of Melissa Clark’s recipes in her recent cookbook, Dinner: Changing the Game. Instead of using chicken, the blogger behind Gather & Dine uses chickpeas. The rest of the recipe includes lots of potatoes and leeks. “The chickpeas turn lightly crisp on the outside and remain tender creamy on the inside,” the blogger says of her riff on the recipe.

Where this recipe really shines is in the different spices it uses. The potatoes and chickpeas are tossed in harissa and olive oil. The leeks are tossed with olive oil and lemon zest. You serve the resulting dish with a garlicky yogurt, fresh cilantro, and a sprinkle of paprika.

I’m going to double this recipe for lunches for my boyfriend and me all week. I’ll serve it with some extra greens, and keep the yogurt sauce separate in my lunch containers so things don’t get soggy. Nobody likes a soggy lunch.
