Are you tired of our strawberry addiction yet? Well, they are about the only new, exciting thing at the markets in New York, so bear with us.

Here’s one more indulgence to whip up for breakfast this weekend—a creamy, sweet, pink strawberry butter that tastes amazing on biscuits, muffins, scones, or a simple piece of toast. If your strawberries are getting soft, it’s a good way to use them up…

A restaurant in our hometown always serves strawberry butter with popovers, and we have to say, that’s one of our favorite combinations. But it’s versatile. You can really put it on anything.

Strawberry butter is no more difficult to make than a basic herb butter. Mash your strawberries, maybe add a bit of sugar if you want the butter to be sweet, and mix with softened butter until fully combined and beautifully pink. You can then form it into a log, rolled in plastic wrap or waxed paper.
