They can be cooked on the grill, in the oven, or even on a campfire recipe with minimal cleanup and even less prep. Plus, you can serve them as a side or as dinner themselves. And they call for only five ingredients!

Give Your Foil Packets the Cajun Treatment

If I learned anything from a childhood of Girl Scout summer camps, it’s this: Don’t settle for bland foil packet dinners! It’s easy to pack dried herbs and spices no matter where you’re headed — vacation rental house or campground — and packing a single spice blend you love is easier than keeping separate containers of salt, pepper, and the like.

Cajun seasoning like Slap Ya Mama also has the distinct ability to turn these simple packets into something that truly feels like a meal. A little butter added to the packets tempers the heat of the sausage and Cajun seasoning and helps to encourage steam cooking.

You’ll want to use small, tender potatoes for these packets, and quarter them so they can cook as quickly as the green beans and sausage. Seal the packets well so that they steam in the oven or on the grill, and use caution when opening the packets.

Ingredients

  • 12 ounces

    smoked sausage, such as andouille or kielbasa, cut into 1-inch pieces

  • 1 1/2 pounds

    baby Yukon gold potatoes, quartered

  • 8 ounces

    green beans, trimmed and halved

  • 1 tablespoon

    Cajun seasoning

  • 2 tablespoons

    unsalted butter, melted and cooled

  1. Heat an outdoor grill to medium-high heat. Prepare 4 (8x8-inch) sheets of heavy-duty aluminum foil and set aside.  

  2. Place the sausages, baby potatoes, and green beans in a large bowl. Add the Cajun seasoning and butter and toss to coat everything in the spicy, buttery goodness.

  3. Divide the potato and green bean mixture between the 4 pieces of foil. Fold each piece of foil up into a tight packet that is completely sealed — fold 2 opposing sides together and then crimp the edges closed.

  4. Place the packets on the grill. Cover and grill until the potatoes are tender, about 25 minutes. Use caution when opening the packets, as they are quite steamy.

Recipe Notes

Oven cooking: These packets can also be baked in a 425°F oven for 20 to 25 minutes.

Storage: Leftovers can be refrigerated in an airtight container up to 4 days.
