This Sausage, Kale, and Potato Dinner Cooks in One Skillet

A hot pan and a bit of oil do great things for dark, leafy greens like kale. If that oil happens to taste just like spicy sausage? Even better. This skillet dinner takes that ideal pairing and makes it into a complete meal by adding some starchy potatoes and sliced onions. The end result is an easy one-pan dinner that covers all your bases and takes almost no time to clean up. 

For best results, start with boiled red potatoes. Boiling the potatoes in advance ensures you’ll get a perfect crisp, brown skin and surface with a soft, creamy inside. But you don’t have to boil them at the same time that you make the skillet. The author says you can boil them in advance, which makes them perfect for weekend meal prepping. 

Brown the boiled potatoes in the skillet in hot olive oil, then add sliced sausage. The author uses chicken sausage, but you can use whichever you like. Personally, I like my sausage spicy. Once the sausage browns, add sliced onions and cook them until they’re softened and translucent. Lower the heat to medium, then add freshly minced garlic. 

Stir sliced, de-stemmed kale into the pot and cook it until the leaves are wilted. Stir the skillet frequently to keep the kale rotating so it all cooks roughly evenly. Kale is huge and shrinks a lot with cooking, so if you don’t have room for the sausage, potatoes, and kale in the pan, use a slotted spoon to take the sausage and potatoes out, leaving the oil behind. Then cook the kale in the reserved oil. When the kale wilts, you should have plenty of room for the rest of the ingredients. Return those to the pan and stir.

Finish it off with a big squeeze of fresh lemon juice to brighten up all the flavors, and you have a perfect one-skillet dinner. This recipe makes a huge portion, too, so you’ll have plenty of leftovers for lunch the next day.
