Get Excited: Samin Nosrat of “Salt, Fat, Acid, Heat” Is Working on a New Cookbook

Samin Nosrat, the woman behind the New York Times-bestselling cookbook Salt Fat Acid Heat, which also won the James Beard award for best cookbook in 2018 and inspired a Netflix docuseries of the same name, has announced her much anticipated follow-up: a new cookbook titled What to Cook.

In an Instagram post, Nosrat explains that the book is based on a simple principle: She wants to help people decide what to cook, just as the title suggests. But those are the only details on what we can expect from her latest recipes at the moment. Still, knowing what we know about Nosrat’s cooking, we can make a few predictions: This cookbook will likely feature more of the colorful, rich, and flavorful vegetable-focused dishes that made her a household name.

It’s not just the food that will be stylish, though. Part of what made Salt Fat Acid Heat such a charming, alluring debut is the accompanying illustrations by artist Wendy MacNaughton. The pair will collaborate again on this book, so you can look forward to beautiful and instructive illustrations to help clarify and expand on Nosrat’s recipes. This is a trend in Nosrat’s repertoire: All her food is prepared and plated beautifully, but it’s also refreshingly accessible: Anyone who can get their hands on the right ingredients can cook her food in their own homes — no fancy restaurant required.

Nosrat promises that the book will be “educational, functional, smart, and most importantly, very, very fun,” but she also warns that she is a “painfully slow writer.” That means that we might be waiting quite a while before we see this book out in the world, but given that Nosrat has captured the world’s attention with her inventive, democratic cooking methods, it’ll probably be worth the wait.
