Vegan Snack Recipe: Toast with Hummus & Veggies
This crunchy, veggie-topped hummus toast is the perfect go-to snack for your busy day. It’s rich in fiber and healthy fats, and boasts plenty of veggie goodness. Spicy radishes and a hint of lemon brighten up the nutty sprouted-grain toast and creamy hummus.
Other delicious ideas for toppings include diced tomatoes, thinly sliced apples, shredded carrots, fresh basil, chopped spinach and more.
If you want to add more flavor and texture, drizzle some extra virgin olive oil and lemon juice over top.
Another fun way to add some “spice” to this recipe, literally, is to add a few pinches of various seasonings like smoked paprika, black pepper, cayenne, curry powder, garlic powder and more. I also love adding exotic salts over top. Try black or pink salt!
Toast with Hummus & Veggies
Serves 1 to 2

Ingredients
- 2 slices
sprouted-grain bread, toasted
- 2 tablespoons
hummus, store-bought or homemade
- 3
medium radishes, thinly sliced
- 1/4 cup
cucumber slices
Pinch sprouts or microgreens
Salt and pepper to taste
- 1 to 2
lemon wedges to serve
Instructions
If using homemade hummus, prepare it ahead of time.
Toast the bread and add hummus to each slice. Add the veggies to the hummus-topped toast, and serve with salt and pepper and lemon wedges.
