There’s nothing wrong with a classic grilled cheese — the formula’s been around forever for good reason. On the other hand, it’s a formula that lends itself to new flavors so well. Take, for example, this Tangy Balsamic Peach Gouda Grilled Cheese. Alexandra made one for her longtime friend Katherine, who recently moved to her neighborhood after years spent living abroad. It uses Arla® Sliced Gouda for its mildly nutty flavor, which teams up brilliantly with fresh, juicy peach slices and the tangy-sweet balsamic glaze. It’s also made with no synthetic hormones,* artificial flavors, or preservatives — something that Alexandra is thinking about more now as a new mom.

As grilled cheeses go, this one’s a far cry from the white bread and American cheese version we grew up with, yet it will still take you right back to those days.

Alexandra told us that for her, grilled cheese is the feeling of being home:

“I used to share grilled cheese sandwiches with my mom — at home in the kitchen; sitting next to one another at a diner counter; when we traveled together and longed for a taste of home. The first British term I learned when we moved to London was that my favorite sandwich is called a ‘toasted cheese’ there! I learned that a grilled/toasted cheese sandwich after school was the perfect cure for homesickness.”

“I love to share grilled cheese sandwiches with my girlfriends. It’s an easy dish, always a crowd-pleaser, good for vegetarians and carnivores alike, and can be experimental in flavor and ingredients which is so much fun!”

Tangy Balsamic Peach Gouda Grilled Cheese

Ingredients

  • 4 slices

    sourdough bread

  • 4 slices

    Arla® Gouda Sliced Cheese

  • 1

    medium peach, pitted and cut into 1/4-inch slices

  • 2 teaspoons

    balsamic glaze

  • 1/2 cup

    loosely packed fresh baby spinach

  • 6 slices

    cooked bacon

  • 1 tablespoon

    butter or bacon grease

  1. Place 2 slices of the bread on a work surface. Places 2 slices of Arla® Gouda Sliced Cheese on each slice of the bread. Place with the peach slices on top of the cheese, then drizzle with the balsamic glaze. Top with the spinach, then the bacon. Close the sandwiches with the remaining 2 slices of bread.

  2. Melt the butter or bacon grease in a large skillet over medium heat. Cook until the bottoms are golden brown, 3 to 4 minutes. Flip the sandwiches, cover again, and cook until the second side is golden brown, 3 to 4 minutes more. Cut in half if desired.
