Two of the best parts of summer are ice-cold lemonade and fresh-picked juicy peaches. Combine them, add a little vodka and some sparkling water, and now you’ve got the third best part: a pitcher cocktail to kick off the weekend.

Before making this pitcher cocktail, you need to peel your peaches. This is super easy: First, slice an “X” in the bottom of each peach. Next, place them in a pot of boiling water for 30 seconds. Then transfer each peach to an ice bath. Once they’re cool enough to handle, just peel the skins off with your fingers. Easy!

Once you’ve puréed those peeled and pitted peaches, you’re halfway to a perfect pitcher cocktail. Add some simple syrup, fresh lemon juice, sparkling water, vodka, and lots of ice, and it’s ready.

Ingredients

  • 1 cup

    granuluated sugar

  • 1 cup

    water

  • 3

    large peaches

  • 6 cups

    sparkling water or club soda

  • 1 cup

    freshly squeezed lemon juice

  • 1 1/2 cups

    vodka

  • Ice

  1. In a small pot, combine the sugar and 1 cup of water. Bring to a simmer over medium heat, and simmer until the sugar is dissolved. Remove from heat and let cool completely.

  2. Remove the skins from 2 of the peaches: Cut an "X" in the skin on the bottom of each one. Drop in a pot of boiling water for about 30 seconds. Transfer the peaches to an ice bath, and peel when cool enough to handle. Slice each peeled peach in half and remove the pits. Cut the peaches into cubes, place in a blender or food processor fitted with the blade attachment, and process until puréed. Pour into a large pitcher.

  3. Add the cooled simple syrup, sparkling water, lemon juice, and vodka. Stir to combine. Add ice and stir again. Cut the remaining peach into thin slices. Stir a few of the slices into the lemonade and use the others to garnish the glasses.

Recipe Notes

You can use store-bought peach purée, but it will be sweeter than using fresh peaches. Adjust the amount of simple syrup as needed.
