In the States and most of Canada, apple cider is the name given to unsweetened, unfiltered apple juice. It is non-alcoholic and has a limited shelf life unless frozen. Alcoholic versions are called hard cider. In other parts of the world, cider refers to an alcoholic drink made from fruits such as apple or pears, can be dry or sweet and is often slightly fizzy from fermentation.
